ingredients
6 low carb tortillas
1 can (20 ounce size) no-sugar-added apple pie filling, canned
2 tablespoons butter, for frying
2 tablespoons canola oil, for frying
1 teaspoon cinnamon
1 tablespoon granular sugar substitute
directions
Heat butter and oil in a frying pan over medium heat.
Spoon apple mixture in row at one end of tortilla, dividing evenly between all tortillas (You may need more or fewer tortillas depending on the size of the tortilla used).
Fold over bottom, covering apple mixture, then fold over both sides. Roll tortillas snugly. Spread a bit of apple mixture liquid on final "flap" to help it seal to the roll.
Raise frying pan heat to medium-high. Place chimis in frying pan, flap side down first, and fry chimis until golden brown, turning to brown all sides.
Sprinkle with cinnamon and sugar substitute after removing from frying pan. Serve warm.

i made these for my dad for his birthday, he's diabetic and I wanted something yummy, but healthy. Everyone loved these; from the grown ups to the kids! Super easy to make!
