Sausage And Rice Stuffed Butternut Squash

ingredients
1 small butternut squash, halved length-wise
1/4 cup uncooked rice
1/2 cup chicken broth
1/4 pound polish sausage, finely diced
3 large button mushrooms, finely diced
10 green beans, diced
1/8 cup shredded cheddar cheese
directions
Preheat oven to 375 degrees F.
Scoop seeds out of squash. Place butternut squash halves cut side up in baking dish. Bake for 30 minutes. While squash is baking, combine rice and water with bullion cube, bring to boil and reduce heat, simmering covered for 10 minutes or until rice is tender. Mix sausage, mushrooms, green beans, and cheddar cheese with rice. Stuff squash halves with mixture and bake an additional 15 minutes or until squash is tender.
