ingredients
2 pounds crookneck squash, cut to your preference
1 medium onion, sliced thin
8 ounces egg noodles
2 cans (milder) Ro*Tel Diced Tomatoes and Green Chilies
1/3 cup grated Parmesan cheese
1 cup water
cooking spray or oil
directions
Lightly oil or spray with nonstick spray a sufficiently large frying pan or heavy sauce pot. Sweat the onions and squash over medium-high heat. Add water, Ro*Tel product and noodles and bring to boiling.
Reduce heat to medium, cover and simmer for 12 minutes, stirring occasionally. Stir in cheese and serve.
