Green and Gold Squash Casserole

ingredients
1 medium onion, chopped
2 tablespoons olive oil
2 medium zucchini, grated
2 medium yellow summer squash, grated
2 tablespoons fresh parsley, chopped
1 1/2 tablespoon fresh oregano, chopped
1 teaspoon black pepper
1/2 teaspoon salt
3 eggs, beaten
1 cup saltine cracker crumbs
1 cup grated Cheddar cheese
directions
Saute veggies in oil until much of the moisture disappears (this is critical, or your casserole will be soggy).
Remove from heat. Stir in other ingredients, except cheese. Place in freezer bag. Place cheese in second bag. Tape together.
To serve, thaw and place squash mixture in 9" greased casserole. Top with cheddar and bake in a 325 degrees F oven for 45 minutes.
