Carrot Stuffing Casserole

ingredients
4 cups sliced, cooked and drained carrots
1 can (10.75 ounce size) cream of celery soup
1 chopped onion
1/2 cup melted margarine
1 cup sharp shredded Cheddar cheese, divided
1 box chicken flavored stuffing mix
directions
Mix together carrots, soup, onion, margarine, 1/2 cup of the Cheddar cheese and stuffing mix.
Put into greased 2-quart casserole.
Top with remaining 1/2 cup Cheddar cheese.
Cover and bake at 350 degrees F for about 30 minutes.

This recipe got so many compliments at a function I took it to! I added a little sour cream and melted Velveeta. Yumm!!! This will be on our Thanksgiving table every year!

I brought this dish to two family Christmas dinners. The adults loved having something different on the buffet and all the kids were willing to try it because of the cheese and crispy topping. I will definitely share this dish again!
