Slow Cooker Carrot Onion Casserole

ingredients

6 cups diagonally sliced carrot
1 1/2 cup sliced onion
1/2 teaspoon salt
1/2 cup water

SAUCE

1 tablespoon all-purpose flour
1 dash salt
1 dash black pepper
1/2 cup milk
1/2 cup grated medium or sharp Cheddar cheese

TOPPING

1 tablespoon hard margarine or butter
1/4 cup fine dry bread crumbs

directions

Place carrot, onion, salt and water in 3 1/2 quart slow cooker. Stir. Cover. Cook on High for 4 to 5 hours. Drain. Place in serving bowl.

For Sauce: Stir flour, salt and pepper together in small saucepan. Whisk in milk gradually until no lumps remain. Heat and stir until boiling and thickened.

Add cheese. Stir to melt. Pour over vegetables. Stir.

For Topping: Melt margarine in saucepan. Stir in bread crumbs. Heat and stir until browned. Sprinkle over vegetables before serving.
