ingredients
1/2 cup butter, at room temperature
1 cup granulated sugar, PLUM
1 teaspoon granulated sugar
2 large eggs
1 cup all-purpose flour
1 teaspoon baking powder
1 1/4 pound Italian or prune plums, quartered
1 tablespoon lemon or lime juice
1 pinch cinnamon
directions
Cream together butter and 1 cup sugar until well blended; beat in eggs, then flour and baking powder. Beat to mix well; turn into buttered 9 inch springform pan.
Place plum quarters on top of batter, close together in circles starting at the outside, in a flower or petal pattern. Sprinkle with lemon juice.
Mix remaining sugar with cinnamon; sprinkle over top.
Bake in center of 350 degrees F oven for 1 hour or until cake tester inserted in center comes out clean and top is golden brown.
Serve warm or cold with whipped cream, slightly sweetened low fat plain yogurt or vanilla ice cream.

Very, very good. A keeper! I made it with Italian prune plums and it was great. I would like to try it using apples.

this recipe was a hit. Everyone loved it. I did add 1/2 teaspoon of vanilla and 1/2 teaspoon of almond extract to the batter. I am ready to make another one. Thanks so much
