ingredients
42 ounces apple or peach pie filling
8 (8 inch) flour tortillas
1 teaspoon ground cinnamon
1/3 cup butter
1/2 cup sugar
1/2 cup packed light brown sugar
1/2 cup water
directions
Spoon pie filling evenly down the center of each tortilla. Sprinkle lightly with ground cinnamon. Roll up and place seam side down in a greased baking dish.
In a medium saucepan, combine the butter, sugar, brown sugar and water. Bring to a boil; reduce heat and simmer for 3-5 minutes or until syrupy. Pour over enchiladas in baking dish and let stand for 20-30 minutes.
Bake at 350 degrees F for 20 minutes or until golden brown. Serve warm with vanilla ice cream or whipped cream.

The trick is letting the butter "sauce" set. You have to let it set for 45 mins after you pour it over the enchiladas so they can soak up all that yummyness, 😋 then bake them. 😉
This is really yummy. But it came out doughy and soggy for me too. I'm going to try baking it a little before I pour the butter/sugar mixture on it. My husband still loved it!

These were served at our ladies luncheon and they were great. The host had added chopped pecans to the sauce.
