ingredients

1 package (12-16 ounce size) fresh cranberries
2 cups sugar
2 boxes (small size) cherry gelatin powder
2 cups boiling water
1 large orange, cut in wedges (peel on)
15 ounces crushed pineapple, undrained

directions

Place the cranberries, sugar, orange wedges (including the rind), and pineapple in a food processor. Pulse process to chop everything coarsely.

Combine the gelatin powder and boiling water in a heat-proof bowl. Stir to dissolve the gelatin.

Combine the gelatin and chopped fruit mixture in a decorative serving bowl and place in the refrigerator overnight to set.

    I use cranberry jello instead of cherry.

    this recipe is a great twist on the usual homemade cranberry sauce. Make it 100% by leaving out the added sugar and replace the regular flavoured gelatin with sugar free gelatin. It thickens the same and takes great.
