Christmas Cranberry Salad

ingredients
2 cups coarsely chopped cranberries
3 cups miniature marshmallows
3/4 cup sugar
2 cups chopped, unpeeled apples
1/2 cup seedless grapes, cut in half if desired
1/2 cup chopped walnuts or pecans
1/4 teaspoon salt
1 cup whipping cream
directions
Combine the marshmallows and cranberries in a bowl and sprinkle with the sugar. Toss to coat them completely in the sugar. Cover the bowl and place in the refrigerator overnight.
The next day, stir in the apples, grapes, walnuts, and salt. Mix well.
Place the whipping cream in a chilled metal bowl and beat on medium speed with an electric mixer until stiff peaks form.
Gently fold the whipped cream into the fruit mixture. Serve immediately or cover the bowl again and chill until ready to serve.

My mother-in-law had a recipe similar to this. Long gone. I omitted the grapes in this recipe (none in original recipe)and increased the cranberries to 1#. We loved this. I used Fugi apples very crisp, tart and sweet. Mom would have approved.

I made this for both Thanksgiving and Christmas. Everyone loved it and wanted the recipe! Cranberries were a little hard to find for Christmas, but one grocery store came through for me. I used an apple called a Honey Golden (found at an apple orchard in Wisc.) It had a pear-like taste that made the salad perfect!
