This spinach marinara sauce combines robust flavors of spinach, mushrooms, crushed tomatoes, garlic, and red pepper, simmered in the crock pot.

1/4 cup olive oil
1 onion, chopped
3 cloves garlic, minced
1/3 cup peeled and grated carrot
1 package (10 ounce size) frozen chopped spinach, thawed, well drained
2 cans (6 ounce size) tomato paste
1 can (4.5 ounce size) sliced mushrooms, drained
2 tablespoons salt
2 tablespoons dried oregano
2 tablespoons dried basil
1 tablespoon crushed red pepper or to taste
1 can (28 ounce size) crushed tomatoes, undrained

Heat the oil in a skillet over medium heat. Add the onions and cook, stirring frequently, for 2-3 minutes or until the onions begin to soften.
Add the onions and oil to the crock pot. Stir in the remaining ingredients and mix well.
Cover the crock pot and cook on low heat for 2-3 hours.
Serve the sauce hot over pasta. Refrigerate leftovers for up to 4 days. Sauce can be frozen in an airtight container for up to 6 months.
