ingredients
3/4 cup packed brown sugar
1/2 cup sugar
1 container (8 ounce size) vanilla or plain low-fat yogurt
2 egg whites, lightly beaten
2 tablespoons vegetable oil
2 tablespoons fat-free milk
2 teaspoons vanilla extract
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups oats (old fashioned or quick, uncooked)
1 cup diced dried mixed fruit, raisins, or dried cranberries
directions
In a large bowl, combine the sugars, yogurt, egg whites, oil, milk and vanilla. Mix well.
In a medium bowl, combine flour, baking soda, cinnamon, and salt; mix well. Add to yogurt mixture; mix well. Stir in oats and fruit.
Spread dough onto bottom of ungreased 9" x 13" pan and bake in a preheated 350 degrees F oven for 28-32 minutes or until lightly brown.
Cool completely on wire rack. Cut into bars and store in a covered container.

These were really good and chewy. I made them with Splenda brown sugar and Splenda regular instead of regular sugars. Also I would recommend instead of using an ungreased baking dish, to put some parmchment paper on the bottom, with one sheet going lengthwise extending up over the top of the dish, and another sheet going crosswise extending over the top of the dish. I used a glass baking dish, and it was very difficult to go around the edges with a sharp knife to loosen before cutting into bars. That way you can just lift out the whole thing when they're cooled and cut easily.
