It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Easy Peach Bars

ingredients
Crust
1 cup shortening
2 2/3 cups flour
1/2 cup sugar
Topping
1 can peaches
2 eggs, or egg substitute
1/2 teaspoon baking powder
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon cinnamon
4 tablespoons flour
directions
Preheat oven to 350 degrees F.
Mix crust ingredients together until uniformly crumbly. Press into the bottom of a 9" x 13" pan and bake for 20 minutes or until just lightly brown.
Meanwhile, drain the peaches, reserving the juice, and put into a blender with the eggs. Whirl until smooth, and then add the spices.
Mix flour and baking powder together, and add peach mixture, blending until smooth.
When the crust comes out of the oven, pour the peach mixture over the hot crust, and return to the oven for 25 minutes.
Let cool and slice into bars.
NOTE: Canned pears also work well. Ginger and cardamom work well in place of the other spices also.

Hey! I would love to try this recipe, but not until you let me know what size can of peaches. Is this a 28 oz or 14-1/2 oz. can? Considering that the peaches need to be thickened with the eggs or replacer, this could turn into a big mess!
