Cherry Pineapple Bars

ingredients
2 cups flour
1 cup packed brown sugar
1/2 teaspoon salt
1 cup butter
1/2 cup sugar
2 tablespoons cornstarch
1 can (8.75 ounce size) crushed pineapple, undrained
2 beaten egg yolks
1 cup maraschino cherries, chopped
directions
Preheat oven to 350 degrees F.
Combine flour, brown sugar and salt. Cut in butter with a pastry blender or two knives until crumbly. Set aside 1 cup of crumb mixture.
Press remaining mixture onto bottom of 13-inch by 9-inch baking pan. Bake for 15 minutes. Cool slightly while preparing topping.
In a saucepan, combine sugar and cornstarch. Stir in pineapple and egg yolks. Cook and stir over medium heat until mixture thickens and bubbles. Remove from heat and stir in cherries.
Spread evenly over baked crust. Sprinkle with reserved crumb mixture. Bake for 30 minutes. Cool before cutting into bars.
