Tuna Seared In Wasabi Crust

ingredients
1/2 cup wasabi peas
1 1/2 pound tuna steak, trimmed of dark flesh and cut in equal slices
4 teaspoons mayonnaise
nonstick oil spray
1/4 cup ponzu sauce
1/4 cup sake
directions
Grind the wasabi peas in a food processor into a fine meal and pour onto a sheet of foil. Brush the tuna pieces with the mayonnaise and dredge in the ground wasabi peas until they are thoroughly coated.
Place an iron skillet over high heat for 5 minutes and coat with oil spray. Brown the tuna pieces on both sides for 2 to 4 minutes per side, depending on the thickness of the tuna and how you like your fish cooked.
While the tuna is cooking, combine the ponzu sauce and sake.
Serve each portion of tuna with sauce for dipping or slice and fan the slices and drizzle with the sauce.
