Salmon with Blue Cheese

Grilled salmon is topped with a creamy blue cheese sauce. A strange sounding combination but the results are delicious.

ingredients

1 tablespoon Worcestershire sauce
1/4 cup nonfat half and half (or for low carb use heavy cream)
1/2 cup crumbled blue cheese, plus extra
1 tablespoon flour (omit or use flour substitute for low carb)
olive oil
1 teaspoon freshly ground black pepper
4 salmon fillets (1/2 to 1 inch thick)
1/4 cup chives, snipped

directions

Mix the Worcestershire sauce, half and half or cream, 1/2 cup blue cheese, and flour in a saucepan over medium-low heat. Stir until the cheese melts and begins to boil. Remove and keep warm.

Coat grill with cooking spray. Preheat for 5 minutes. Brush fillets with oil and sprinkle with pepper.

Grill 4 - 5 minutes, until flakes easily. Serve topped with cheese sauce, chive and a little extra of the crumbled blue cheese

    I gained this recipe with my George Foreman grill and it is one of the best ways to have fresh salmon. The recipe got lost along the way while moving, but I am so glad I have found it again. We will be having this in the next few days I'm sure! We are big blue cheese fans, but I wouldn't recommend another cheese as it wouldn't play well with the Worcestershire sauce. Sounds weird, but a definite must try for cheese and salmon lovers.

    My first thought was, "salmon and blue cheese? really?". I have to say, I was glad I tried it. It really worked well together. The blue cheese flavor is definitely a huge player in this concoction so if you don't like blue cheese you won't like the recipe. I was a little worried about the sauce but it is used in small amounts and it really made for a great dinner.
