Salmon Osso Buco

ingredients
4 large salmon steaks, skin removed
4 very large sea scallops
4 slices bacon
directions
Preheat oven to 400 degrees F.
Remove any little bones from salmon steaks, including the small center bones.
Insert 1 sea scallop in between the flaps of each salmon steak, where the little center bone was. Cut off a 1-inch piece from the end of one flap so that you can easily wrap flaps around sea scallop. The goal is to make a tight, round shape to resemble traditional osso buco.
Cut each slice of bacon in half lengthwise to make 2 long strips. Wrap 2 bacon strips around edges of salmon package (as though you were replacing the skin) and secure tightly with several toothpicks. Place salmon on a rimmed baking sheet. Sprinkle with salt.
Bake for 10 minutes, or until salmon is cooked to desired doneness. Do not overcook. Sprinkle with coarsely cracked black pepper.
