ingredients
6 salmon steaks (6 ounces each)
1 cup dry vermouth
1/4 cup fresh lemon juice
2 tablespoons finely chopped onion
1 clove garlic, minced
2 teaspoons kosher salt
1/4 teaspoon summer savory
1/4 teaspoon freshly ground black pepper
1/4 teaspoon thyme
2/3 cup melted unsalted butter
directions
Place salmon steaks in a shallow nonreactive or glass pan.
In a medium bowl, whisk remaining ingredients. Pour sauce over salmon and marinate, lightly covered, for 4 hours. Turn steaks occasionally.
Heat the grill until the coals are glowing red-hot. Remove steaks from marinade and save the sauce. Place steaks in a wire basket or grill and place them over red-hot coals, about 4 inches from heat, for 8 minutes.
Baste with sauce, turn, baste, then cook the other side another minute or two. Discard remaining marinade.
