Fresh Salmon Loaf With Cucumber-Dill Sauce

ingredients
SALMON LOAF
1 pound skinless fresh salmon fillets, coarsely chopped
1/4 pound sliced smoked salmon, coarsely chopped
1/2 cup coarsely crumbled soda crackers
1/3 cup half and half
1 small yellow onion, finely chopped
1/2 medium green bell pepper, cored, seeded, and finely chopped
2 tablespoons snipped fresh dill
1/4 teaspoon freshly ground black pepper
CUCUMBER-DILL SAUCE
1 container (6 ounce size) plain low-fat yogurt
1 small cucumber, peeled, seeded, and diced
1 tablespoon snipped fresh dill

For Salmon Loaf: Preheat the oven to 350 degrees F. Coat an 8 1/2- x 4 1/2- x 2 3/4-inch loaf pan with nonstick cooking spray and set aside.
Using your hands, thoroughly mix all ingredients in a large bowl, then pack into the pan.
Bake in the lower third of the oven until an instant-read thermometer inserted in the middle of the loaf registers 160 degrees F, about 30 minutes. Cool the loaf in the upright pan on a wire rack for 5 minutes.
For Sauce: While the loaf is cooling, quickly whisk together the yogurt, cucumber, and dill, then scoop into a sauce boat.
Turn the salmon loaf out on a heated platter, cut into slices about 1 inch thick, and serve. Pass the sauce separately.
