4 slices American cheese
1 cup evaporated milk
2 cups chopped, cooked potatoes
1/4 cup chopped onion
2 tablespoons chopped pimiento or green pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
1 can Spam luncheon meat, cubed
1 package double-crust pie pastry (9-inch size)
Heat oven to 425 degrees F.
Melt cheese with evaporated milk, stirring constantly. Mix with remaining ingredients.
Pour into a 9-inch pie crust. Cover with another pie crust and cut 4 slits to vent. Bake for 35-40 minutes.
