Sweet potato noodles are high in vitamins and minerals, and are a good source of fiber. They have a chewy texture and a slightly sweet taste. Serve as a side dish or use them in a stir-fry, soup, or other dish.

2 sweet potatoes
10 tablespoons unsalted butter
1/2 yellow onion, finely minced
salt and pepper, to taste
Peel the sweet potatoes. Cut the potatoes with a spiralizer, julienne peeler, or shred in a food processor.
Add 2 tablespoons butter to a large skillet over medium heat. Add the minced onion and cook, stirring frequently, until the onion is soft. Season the onion with salt and pepper. Remove the onion from the skillet and set aside.
Add the remaining butter to the skillet. When melted, add the spiralized sweet potato. Season with salt and pepper. Cook, stirring occasionally, for 5 minutes or until the sweet potatoes are the desired tenderness. Stir in the reserved onion. Mix well then serve hot.
