ingredients

4 large sweet potatoes
1/2 medium onion, chopped
lemon juice
peanut oil
3 medium tomatoes
salt
black pepper

directions

Boil sweet potatoes in their skins until tender (about 20-30 minutes). Cool, peel and slice.

Add chopped onion, sprinkle liberally with lemon juice and oil. Salt and pepper to taste. Garnish with tomato slices.

Chill.
