Slow Cooker Sweet Potatoes And Pineapple

ingredients
3 cans (15 ounce size) sweet potatoes, drained
10 ounces pineapple pie filling
2 tablespoons butter, melted
1/2 cup brown sugar
1/2 teaspoon cinnamon
Topping
1 cup packed light brown sugar
3 tablespoons butter, melted
1/2 cup flour
1 cup coarsely chopped nuts
directions
In 5 quart slow cooker sprayed with vegetable cooking spray, place sweet potatoes, pie filling, melted butter, brown sugar and cinnamon. Stir lightly.
Cover and cook on low for 2 to 3 hours.
While potatoes are cooking, combine topping ingredients, spread on foil lined cookie sheet and bake at 350 degrees F for 15 to 20 minutes.
When ready to serve, sprinkle topping over sweet potatoes.

This is a great recipe. The recipe calls for 3 15 oz cans, I found that the crock pot did not fill up until three 40 oz cans of Sweet Potatoes. I added walnuts and instead of Pineapple Pie filling I added Key Lime Pie Filling. Proving the recipe foolproof. Terrific tasting and easily done while other cooking tasks are being performed!
