Kahlua Sweet Potatoes

ingredients
4 medium sweet potatoes
1/4 cup butter
1/3 cup brown sugar
1/4 cup Kahlua
directions
Place the sweet potatoes in a large pan of boiling water. Boil until just tender. Drain the water and let the sweet potatoes cool enough to handle.
When cooled, peel the sweet potatoes and then cut them in halves or quarters (depending on the size).
In a heavy skillet, melt the butter over medium heat. Stir in the brown sugar and cook, stirring constantly, until the sugar has melted.
Stir in the Kahlua and cook for 1 minute, stirring constantly.
Add the sweet potatoes to the skillet. Turn them so they are coated on all sides with the kahlua mixture.
Cover the skillet, reduce the heat to medium-low, and cook the sweet potatoes for 15 minutes more, or until fully tender. Turn them once during the cooking time.
Serve them hot.
