Broccoli In Creamy Mushroom Gravy

ingredients
2 heads fresh broccoli, cut into florets
1 large onion, diced
1 package (8 ounce size) cream cheese, softened
1 can (20 ounce size) cream of mushroom soup
2 cups water or chicken broth
8 ounces shredded monterey jack cheese
directions
Place the broccoli and onion in the bottom of the crockpot.
In a mixing bowl, beat the cream cheese until creamy with a mixer on medium speed. Slowly add the soup and water with the mixer running and mix until the ingredients are well mixed.
Pour the soup mixture over the vegetables in the crock pot. Sprinkle the shredded cheese over the top.
Cover the crock pot and cook on low heat for 6 hours or until the broccoli is tender.
Serve as is or over cooked rice, pasta, or mashed potatoes.
