1 1/2 pound lamb stew meat, diced
4 tablespoons butter
1 onion, minced
1 tablespoon curry powder
2 tablespoons flour
1/3 cup lentils
2 tart apples, peeled and diced
1 bell pepper, diced
2 carrots, diced
1 teaspoon sugar
1/2 teaspoon ground mace
1/4 teaspoon ground cloves
salt and pepper, to taste
1 cup coconut milk
2 quarts water

directions

Brown the meat in butter in a skillet. Add onion, curry powder and flour and cook and stir for 2 minutes.

Combine with remaining ingredients, except coconut milk, and the water in the crock pot. Cover and cook on low 8 to 10 hours.

Add coconut milk, heat through, and serve with rice.

    Recipe is okay, but I would suggest using double the amount of curry and half the amount of water. With the recipe as written, it ends up being a bland soup rather than a spicy stew.
