ingredients

2 tablespoons olive oil
2 large onions, sliced
1 teaspoon fresh ginger, grated
3 cloves garlic, minced
3 pounds chicken pieces, skinned
3 large carrots, diced
2 large potatoes, peeled and diced
2 tablespoons raisins
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon salt and pepper
1/4 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1 can (14.5 ounce size) chopped tomatoes
3 medium zucchini, sliced 1 inch thick
1 can (15 ounce size) garbanzo beans, drained
2 tablespoons parsley, chopped
1/2 teaspoon cilantro

directions

Saute onions, ginger and garlic in oil. Transfer to crock pot.

Brown chicken in same pan over medium heat. Add carrots, potatoes and zucchini to crock pot. Place chicken on top of veggies.

Stir seasonings in a small bowl and sprinkle over chicken. Add raisins and tomatoes.

Cover and cook on HIGH for 4 to 6 hours.

Add beans, parsley and cilantro 30 minutes before serving. Serve over cooked rice or couscous.

    I ommitted the raisins but made it the same otherwise. I didn't think my husband was going to like it but he loved it and told me he'd love for me to make it again. Another win for the crock pot!

    My wife loved this dish. She said it was just right for her; light and tasty. The recipe made enough for four at least and we had leftovers that were as good or better than the first day.

    I thought it was great! I also added craisins in addition to the raisins. The second time I made this I also left out garbanzo beans and tomatoes just for personal preference, and instead just added extra vegetables I had around the house.

    Very tasty dish. I omitted the zuccini and included diced butternut squash. Didn't both witrh rice, just served as is and everone enjoyed it, kids included!

    This dish was so tasty and very easy to prepare. Next time thought I'd be sure to use boneless and skinless chicken pieces (breasts). As I was serving with rice I omitted the potatoes; just too much starch and it was still good. Served with home made bread; it was a winner!

    This dish tasted good, but was a little dry. In my opinion, it needs some kind of liquid added to it. But, like I said, the flavors were nice.
