These mini burgers are the perfect way to show off your culinary skills at your next party. Turkey burgers are stuffed with red onion and BBQ sauce, grilled, and served on soft slider rolls.
serves/makes:
ready in: under 30 minutes
ingredients
1/2 cup red onion, diced olive oil 1 pound ground turkey 1/2 teaspoon fresh ground pepper 2 teaspoons all purpose seasoning 1 bottle barbecue sauce 6 small whole wheat rolls mozzarella cheese, shredded
directions
Heat a non-stick skillet to medium and add 1 teaspoon olive oil and the onions. Cook until nicely caramelized, about 10 minutes.
In a bowl mix the turkey with the seasonings. Separate the turkey mixture into equal small portions and form into balls. Make an indentation in each ball and fill with some of the onion and a couple teaspoons of the barbecue sauce.
Heat your grill to medium/high.
Close the pocket and form the meat around the filling to make a small patty and grill the patties until done.
Slice the rolls in half and top with a little of the shredded mozzarella. Put under the broiler for a minute or so to lightly toast.
Place a patty on top of each and place the top on the bun and slice in half.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
