Cottage Cheese Soup

ingredients
4 tablespoons butter or margarine
1 tablespoon grated onion
4 tablespoons flour
4 cups milk
1/2 teaspoon salt and pepper
2 cups cottage cheese
1 pinch chives or parsley
directions
Melt butter, add onion and cook until onion is clear but not browned. Work in flour, then add milk and cook until smooth and thickened, stirring constantly. Add salt and pepper.
Rub cottage cheese through sieve and add to hot liquid stirring until well blended. Serve at once with chives or parsley sprinkled over top.
