You can't beat bone-in grilled chicken for flavor. Or presentation, for that matter. Fill up your plate with a chicken leg and some grilled veggies for a perfect summer meal.

1/2 cup melted butter
1/2 cup lemon juice
1 tablespoon paprika
1 tablespoon dried rosemary
1 teaspoon garlic salt
1 teaspoon ground coriander
1 teaspoon ground cumin
3 pounds chicken quarters
1/2 teaspoon salt
1/2 teaspoon black pepper
Combine the melted butter, lemon juice, paprika, rosemary, salt, coriander, and cumin in a zip-top plastic bag. Mix well. Remove 1/2 cup of the butter mixture to a covered container and place in the refrigerator.
Season the chicken quarters with salt and pepper. Add to the marinade. Seal the bag, press out any excess air. Turn the bag to coat the chicken in the marinade. Place the bag in the refrigerator for 8 hours, turning the bag occasionally.
When ready to cook the chicken, preheat the grill to medium-high heat.
Remove the chicken from the marinade and discard the marinade that was in the bag. Place the chicken on the grill and grill, covered, for 40 minutes or until done. Baste the chicken with the reserved butter mixture frequently during the cooking time.
