1/4 teaspoon saffron threads
1 tablespoon hot water
1/4 cup plain yogurt
1 tablespoon minced serrano pepper
3/4 tablespoon minced, peeled fresh ginger root
3/4 tablespoon minced garlic
3/4 teaspoon ground cumin
1/4 teaspoon fresh-ground black pepper
3/4 teaspoon salt, or to taste
5 boneless, skinless chicken breast halves, cut into 1-inch cubes
1 tablespoon vegetable oil
directions
Combine the saffron and hot water in a small bowl or cup and let soak for 10 minutes.
Meanwhile, combine the yogurt, serrano pepper, ginger, garlic, cumin, salt and pepper in another small bowl and stir until well combined. Add the saffron water and mix well.
Place the chicken and yogurt marinade in a zip-top plastic bag. Seal and turn the bag to coat the chicken completely with the marinade. Place the bag in the refrigerator and let chill for 6-12 hours.
Preheat the oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil.
Drain the chicken from the marinade and place the chicken cubes on the prepared baking sheet. Drizzle lightly with the oil.
Place the baking sheet in the oven and bake at 375 degrees F for 15 minutes or until the chicken is cooked.
Serve hot over rice or on flatbread with lettuce and tomatoes.
