It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

4 pounds chicken pieces, skin on
3/4 cup hot pepper sauce, divided
1/4 cup butter or margarine, melted
Preheat oven to 425 degrees F.
Place the chicken pieces in a foil lined baking pan. Brush them with 1/4 cup of the hot sauce.
Place the pan in the oven and bake at 425 degrees for 1 hour or until the chicken is cooked through (juices should run clear when the chicken is pierced with a knife).
Combine the remaining 1/2 cup of hot sauce and the melted butter in a large bowl. Dip the cooked chicken into the sauce, making sure to coat thoroughly. Place on a serving plate and serve immediately (with lots of napkins!)
If desired, serve with blue cheese dressing on the side for dipping.
