2 bay leaves
3/4 cup white vinegar
2 teaspoons sugar
2 teaspoons salt
2 1/2 cups vegetable oil
1 teaspoon black pepper
pineapple cubes (cut into chunks)
1 tablespoon garlic (minced)
lettuce (shredded)
tomato wedges
3 pounds chicken pieces
Cut chicken into serving pieces.
Rub with salt, pepper and garlic and place in a dish with bay leaves.
Sprinkle on vinegar and sugar to marinate.
Cover and set aside for 2 hours.
In a non-aluminum pan, simmer chicken in marinade, turning frequently until tender, and the liquid completely evaporates.
Heat oil in another pan and fry chicken on both sides until well colored and crisp.
Lift out, drain, and serve on a bed of shredded lettuce with tomato wedges and cubes of fresh pineapple.
