Slow Cooker Pollo Mexicano

ingredients

3 pounds boneless, skinless chicken thighs
2 tablespoons olive oil
1 large bell pepper, chopped
1 large onion, chopped
2 cans tomatoes with chiles (mild or hot)
2 packages taco seasoning mix
3 tablespoons dried parsley flakes
1/4 cup cooking sherry
1 pound process cheese product, cubed

directions

Place all the above in a large crock pot, turn on high. Cook for about 3 hours, reduce to low setting, and add cheese, cubed.

Continue at low setting until chicken is done and sauce is creamy.
