Spaghetti Squash Slaw

ingredients
1 large spaghetti squash, cooked, cooled and threads removed and chilled
1 large carrot, grated
1 medium red bell pepper, seeded, julienne
1 rib celery, minced
1 small red onion, minced
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill weed
3/4 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon prepared horseradish
1/4 teaspoon black pepper
salt, to taste
directions
Cut spaghetti squash into 1 inch lengths and place in bowl. Add carrot, red pepper, onion and celery. Toss well. Sprinkle with parsley and dill.
Combine mayonnaise, mustard, vinegar, oil, honey, horseradish, salt and pepper; stir two thirds into squash mixture and mix gently. Add more as necessary to get the proper consistency.
Taste and adjust seasoning if necessary.
