Savory Coleslaw

Savory coleslaw is coleslaw, but with a few extra ingredients added in for extra flavor. We like to add in some Dijon mustard and freshly ground black pepper to really give it a zing.
ingredients
1 cabbage, core removed
2 small carrot, peeled
1 red bell pepper, seeded
1 cucumber, peeled
1/4 red onion
2 stalks celery
Dressing
1 1/4 cup light mayonnaise
2 tablespoons olive oil
2 tablespoons wine vinegar
2 teaspoons Dijon mustard
freshly ground black pepper, to taste
directions
Grate the cabbage, carrot, bell pepper, cucumber, red onion, and celery and place in a large bowl.
In another bowl, whisk together the mayonnaise, olive oil, vinegar, mustard, and black pepper. toss the dressing and vegetables together until well combined.
Cover the bowl and chill the savory coleslaw for 1 hour.

I made this for our extended family's Labor Day get-together. It tasted good and went over fairly well with everybody. My secret was to keep it very well chilled till serving!
