Chocolate-Pineapple Brownies

Brownies
12 tablespoons butter, softened
1 1/2 cup sugar
3 eggs
1 teaspoon vanilla extract
1 1/2 cup sifted flour
1/2 teaspoon cinnamon
1 teaspoon baking powder
1 cup drained crushed pineapple
2 ounces semisweet chocolate, melted
Frosting
3/4 cup solid vegetable shortening
1 egg white
1 package (16 ounce size) confectioners' sugar
1 tablespoon flour
1 dash salt
1 teaspoon vanilla extract

directions
Preheat oven to 325 degrees F. Grease a 9-by-13-inch pan.
In a mixing bowl, cream butter and sugar until light. Add eggs, 1 at a time, beating after each addition. Add vanilla. Beat until fluffy.
In a separate bowl, sift together flour, cinnamon and baking powder. Add to creamed mixture.
Measure 1 cup batter into another bowl. Add pineapple. Blend well. Add melted chocolate to batter in first bowl.
Spread half of chocolate batter into prepared pan. Cover with pineapple batter. Using spoon, drop remaining chocolate batter over pineapple layer. Spread gently over entire pan. Bake for 45 to 50 minutes. Cool completely.
For Frosting: Mix together shortening, egg white, sugar, flour, salt and vanilla. Add enough milk to reach spreading consistency. Beat until fluffy.
Spread over brownies. Cut into 2-inch squares.
Variation: Add 1 to 2 tablespoons cocoa to frosting ingredients to make chocolate frosting.

These brownies turned out delicious. And the pineapple was a real flavor enhancer that also helped to keep the brownies moist. I would recommend giving them a try.
