Butternut Squash And Chocolate Brownies

If you're skeptical about squash and chocolate, push your doubts aside and just believe. The butternut gives the brownies an incredibly moist texture, and hey, you're getting your veggies during dessert.

ingredients

1 1/2 pound butternut squash, peeled, seeded and cut into chunks
5 ounces unsweetened chocolate
11 tablespoons unsalted butter, cut into bits
4 large eggs
2 cups sugar
1 1/2 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
1 1/4 cup all-purpose flour, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons all-purpose flour
3/4 teaspoon baking powder

Preheat the oven to 375 degrees F. Grease a 9x13 baking pan.

Place the butternut squash in an oven-proof dish large enough to hold the squash in a single layer. Add enough water to fill 1/2-inch. Cover the dish with foil and bake for 1 hour or until the squash is very tender. Drain the squash completely then process the squash in a food processor until smooth.

Reduce the oven temperature to 350 degrees F.

In the top of a double boiler over simmering, not boiling, water, combine the chocolate and butter. Cook, stirring frequently, until the chocolate starts to melt. Once it starts to melt, stir it constantly until completely melted. Remove the top of the double boiler (carefully) and set it aside for the chocolate to cool slightly.

Combine the eggs, sugar, vanilla, and salt in a large mixing bowl. Beat on medium speed with an electric mixer for 2 minutes. Add the cooled chocolate and squash puree and beat on low speed for 2 minutes.

With the mixer running on low speed, add the flour and baking powder. Mix well.

Pour the brownie batter into the greased baking pan. Place in the oven and bake at 350 degrees F for 25 minutes or until a toothpick inserted in the middle comes out clean.

Remove from the oven and let cool on a wire rack before cutting into squares. Store the brownies in an airtight container.
