It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Rich and fudgy brownies made with butter (not margarine) and cocoa powder.

1 1/2 cup butter (no substitutes)
1 1/2 cup unsweetened cocoa powder
5 eggs (room temperature)
3 cups sugar
1 tablespoon vanilla extract (real)
1 1/2 cup all-purpose flour
2 cups chopped walnuts
Heat oven to 375 degrees F (350 degrees F for glass baking dish). Melt butter in a saucepan or microwave. Stir in cocoa powder until smooth.
Beat eggs, sugar and vanilla in a large mixing bowl with an electric mixer on high speed 2 minutes.
Reduce speed to low and beat in cocoa mixture until well blended. Beat in flour just until blended. Stir in walnuts.
Spread in a greased 13" x 9" baking pan. Bake for 35 minutes or until toothpick inserted in center comes out with fudgy crumbs. Do not over bake.
Cool in pan. Cut into small squares.

Very fudgy and good!! Definitely cut the brownies in small pieces because it is very rich.
