Best Ever Banana Date Bread

Banana bread is a great way to use up those bananas that have been sitting on the counter for a few days.

ingredients

2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 cup sugar
1/2 cup butter or margarine, softened
2 eggs
3/4 teaspoon vanilla extract
2 1/2 cups mashed bananas
1 cup chopped dates
1 cup chopped pecans or walnuts

directions

Preheat the oven to 350 degrees F.

In a medium bowl, sift together the flour, baking powder, and baking soda.

In a large mixing bowl, beat together the sugar and butter with an electric mixer until creamy. With the mixer running, add the eggs one at a time, beating well after each addition.

With the mixer still running, add the vanilla and bananas. Add the flour slowly, mixing well after each addition.

Fold in the nuts and dates by hand.

Pour the batter into two 8x4-inch loaf pans. Place in the oven and bake at 350 degrees F for 40-45 minutes or until baked through.

Remove the pans from the oven and let the banana bread cool in the pans for 5 minutes, then remove the bread to a cooling rack to cool completely before slicing and storing. Store the banana bread in an airtight container. This bread freezes well.
