Curried Sweet Potatoes

ingredients
1 pound sweet potatoes
2 tablespoons oil
1 1/2 teaspoon cumin
1 teaspoon ground coriander
3 medium onions, sliced
3 cloves garlic, chopped
1/2 teaspoon chili powder
1 teaspoon garam masala
1 1/2 teaspoon turmeric
1/2 teaspoon ground cloves
3 cups coconut milk
1 teaspoon cinnamon
salt
directions
Peel and dice sweet potatoes.
Heat 1 Tbsp of oil in a frying pan. Add the cumin and coriander, then stir over medium heat for 2 minutes. Add the diced sweet potato and cook until golden brown, stirring frequently. Remove from heat.
In a separate frying pan, heat the remaining oil and saute onions and garlic until golden brown. Add the cinnamon, chili powder, garam masala, turmeric and cloves. Cook for 2 minutes.
Pour in the coconut milk and bring to a boil. Reduce heat and simmer for 10 minutes. Add sweet potatoes and simmer uncovered until tender. Season with salt and serve.
