ingredients
9 eggs
1 cup milk
1/2 teaspoon ground nutmeg
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1 3/4 cup shredded cheddar cheese
1/4 pound cream cheese, cubed
2 teaspoons vegetable oil
2 small onions, chopped
4 cloves garlic, minced
1 package (10 ounce size) frozen spinach, cooked, drained and chopped
6 cherry tomatoes, halved
GARNISH
red and yellow bell peppers
sliced red onion
minced chives
directions
In large bowl, whisk together eggs, milk, nutmeg, oregano, salt and pepper; stir in Cheddar and cream cheese.
In small skillet, heat oil over medium-high heat; cook onions and garlic for 2 to 3 minutes or until softened. Stir into egg mixture along with spinach.
Pour into greased 6 cup tree mold or 8-inch square baking dish or 11- x 17-inch baking dish.
Bake in 350 degrees F oven for 40 to 50 minutes or until puffy, golden brown around edges and set in center.
Decorate with cherry tomatoes, sweet pepper cutouts, red onion "garland" and chive "candles."
