ingredients
1 tablespoon olive oil
1 pound turkey breast cutlets, cut in 1/2" pieces
6 ounces spicy chicken or turkey sausages, sliced 1/2" thick
1 cup green bell pepper, diced
1/2 cup mushrooms, sliced
1/2 cup onion, diced
1 jalapeno pepper (optional), minced
1/2 cup fat-free reduced-sodium chicken broth or water
1 can (14 ounce size) reduced-sodium diced tomatoes, undrained
1 teaspoon Italian seasoning
1/2 teaspoon dried basil leaves
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 cup egg yolk-free egg noodles, cooked
6 tablespoons grated Parmesan cheese
2 tablespoons bread crumbs, coarse
directions
Preheat oven to 350 degrees F.
Heat oil in a large nonstick skillet. Add turkey and sausages, then cook and stir over medium heat for 2 minutes.
Add bell pepper, mushrooms, onion and jalapeno pepper, if desired. Cook and stir for 5 minutes. Add chicken broth and cook for 1 minute, scraping any browned bits off bottom of skillet. Add undrained tomatoes and liquid, seasonings and noodles.
Spoon turkey mixture into shallow 10" round casserole. Sprinkle with cheese and bread crumbs. Bake for 15 to 20 minutes or until mixture is hot and bread crumbs are brown.
