Inside Out Stuffed Pepper Casserole

ingredients
1 pound ground turkey or ground beef
1/2 cup chopped onion
1 can (16 ounce size) stewed tomatoes, with juice, cut up
1 large green bell pepper, chopped
1/2 cup long-grain rice, uncooked
1/2 cup water
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cheddar cheese, low fat, shredded
directions
Preheat oven to 350 degrees F.
Brown the ground turkey (or ground beef) and then place in a 2-quart casserole dish. Combine the other ingredients, except for the cheese, and place on top of the ground turkey.
Cover and bake for 1 hour or until the rice is tender. Uncover, sprinkle with cheese and bake another 5 minutes or until the cheese is melted.

This recipe was easy to make and surprisingly satisfying. The rice on top was a little al dente after an hour, but the interior rice was cooked through nicely. Notes: I used diced tomatoes with their juice in place of stewed tomatoes. It worked out fine. Also, you maybe could use two green peppers, unless the one you've got is huge.

I had to add more liquid as the rice wasn't cooking even after an hour. I thought the combination of water and the tomatoes would be enough but it wasn't. Maybe it was the type of tomatoes I used. Just be sure to check it to make sure you have enough liquid. It's lower fat which I like with the turkey.
