Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

- #19006
ingredients
6 pounds turkey breast
1 cup cranberry juice cocktail
1/4 cup orange juice
1/4 cup olive oil
1 teaspoon salt
1 teaspoon black pepper
1/4 cup chopped fresh cilantro
3 cups frozen cranberries
1/2 cup honey
2 tablespoons fresh lime juice
1/2 cup coarsely chopped purple onion
2 jalapeno peppers, seeded and coarsely chopped
1/2 cup coarsely chopped dried apricot halves
1/2 cup fresh cilantro leaves
2 large oranges, peeled, seeded, and coarsely chopped
directions
Remove and discard skin and breast bone from turkey breast, separating breast halves; place turkey in a large heavy-duty, zip-top plastic bag.
Combine cranberry juice cocktail and next 5 ingredients in a jar; cover tightly, and shake vigorously. Reserve 1/2 cup marinade, and chill. Pour remaining marinade over turkey. Seal bag, and chill 8 hours, turning occasionally.
Position knife blade in food processor bowl; add cranberries and next 7 ingredients. Pulse until chopped, stopping once to scrape down sides (do not overprocess). Transfer cranberry mixture to a serving bowl; chill.
Remove turkey from marinade, discarding marinade.
Cook turkey, covered with grill lid, over medium-hot coals (350 to 400 degrees F), about 15 minutes on each side or until a meat thermometer inserted in thickest portion registers 170 degrees F, basting occasionally with reserved marinade. Let stand 10 minutes before slicing. Serve with cranberry mixture.

Great cranberry salsa the turkey breast. I fix this at Christmas to take to my brother's house for our family gathering. His daughter-in-laws love it. When I show up they ask if I made the salsa again this year. I serve it with Hint of lime tortilla chips. I also use the salsa to make a dip, I mix 1 cup of salsa with 1 package of cream cheese.
