Tender waffles made from scratch with a light apple cider flavor.

1 package (16 ounce size) plain or vanilla flavored yogurt
2 eggs, beaten
1/4 cup apple cider
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
2 cups flour
In a bowl, whisk together the yogurt, egg, and apple cider until smooth.
Stir in the baking soda, baking powder, cinnamon, and flour until everything is well blended. Set the waffle batter aside to rest for 10 minutes.
While the batter is resting, preheat the waffle iron as directed by the machine manufacturer.
When hot, add the waffle batter and cook as directed by the machine manufacturer. Serve the waffles hot with any desired toppings.

Overall the waffles were very good and had a nice texture. I was disappointed that there wasn't more of an apple cider taste, however. There was a hint of cinnamon but not apple cider flavor. Maybe using an apple-flavored yogurt instead of plain or vanilla (I used vanilla) would punch up the flavor a bit. Definitely a good recipe though.
