ingredients
1 1/2 pound ground beef
1 large green bell pepper, chopped
1 large onion, chopped
1/2 cup uncooked instant white rice
1/2 cup water
2 teaspoons chili powder
1 can (16 ounce size) diced tomatoes, undrained
2 teaspoons salt
1/2 teaspoon black pepper
directions
Preheat the oven to 350 degrees F.
Heat a large skillet over medium-high heat. Add the ground beef, bell pepper, and onion. Cook, stirring frequently, until the beef is no longer pink. Drain off any excess grease.
Add the rice, water, chili powder, diced tomatoes, salt, and pepper to the skillet and mix well. Transfer the mixture to a baking dish.
Place the baking dish in the oven and bake, covered, at 350 degrees F for 45 minutes. Remove the cover and bake for another 15 minutes or until the rice is cooked and has absorbed the liquid.
Serve the Texas hash casserole hot.
