A crock pot version of ground beef and rice casserole made with brown rice, cream, onion, and ground beef.

ingredients

1 pound ground beef
1 small onion, diced
2 cups uncooked long-grain brown rice
3 cups water
1 cup milk or half-and-half
1 teaspoon salt
1 teaspoon garlic powder

directions

Heat a skillet over medium heat. Add the ground beef and onion. Cook, stirring, until the beef is no longer pink and the onion is soft. Drain off any excess grease.

Add the beef and onions to the crock pot with the remaining ingredients. Stir well.

Cover the crock pot and cook on high for 3 hours or until the rice is tender. Stir well before serving.

    I'm trying this recipe today but with a few personal twists, so, we'll see how that goes, eh?!:-) I added some diced celery, subbed 2 of the 3 cups of water this recipe calls for with 2 cups of vegetable broth with the 3rd cup being filtered water. I used organic lean ground beef & as I can't have dairy, I subbed the cream this recipe calls for with 1 cup of unsweetened almond milk. Should prove interesting to say the very least! Wish me luck

    Very simple recipe but didn't have much flavor. Maybe use fresh garlic and add some other seasonings. I liked the texture better than I thought I would. Very economical recipe which is why I made it.

    I browned the beef first because otherwise it would turn into a big clump when it cooked. I expected the rice to get mushy but it didn't really. The whole thing was creamy and it tasted good. I only cooked it for 3 hours and it seemed quite done.
