ingredients
1 pound ground beef
1/4 cup bell pepper, chopped
1 package taco seasoning mix
2 cups whole grain rice, uncooked
1 cup butter (melted)
chopped onion, to taste (optional)
directions
Bring rice to a boil in 2 quarts of water until grains are tender, about 25 minutes; avoid stirring too often or it will become mushy. Drain rice when cooked and set aside in saucepan.
Brown ground beef in a separate pan. Add onion, bell pepper and taco seasoning then stir until well blended.
Meanwhile, spoon the prepared ground beef in the middle of a large plate and add the rice around the ground beef. The melted butter may be drizzled over the rice (additional seasoning may also be added, to taste).
