ingredients
1 pound ground beef
1 tablespoon olive oil
1/4 cup onion, chopped
1 1/2 teaspoon salt
1 dash black pepper
1/2 small bay leaf
3 slices American cheese
1/8 teaspoon garlic
1/8 teaspoon thyme
1/8 teaspoon oregano
1 can cream of mushroom soup
1 can (1 pound size) tomatoes
1 cup instant rice (uncooked)
sliced stuffed olives
directions
Brown meat in oil; add onion. Cook until no longer pink; drain well. Stir in seasoning, soup, tomatoes and rice. Bring to boil; reduce heat. Simmer for 5 minutes.
Spoon into 1 1/2 qt. baking dish; sprinkle with cheese. Broil until cheese is melted. Top with olives. Serve hot.

Good! I skipped the oven and just added shredded cheese to the top of skillet mix. Family ate it with no complaints and it was very simple to make!!! Also, I doubled the amount of rice.
